Vegetarian Supper

 

Ingredients:

1 small onion, chopped
1 tablespoon olive oil
2 cups zucchini, thinly sliced
1 cup chopped green pepper
1/2 teaspoon dried whole oregano
1/2 teaspoon garlic salt
1/2 teaspoon each salt and pepper
2 1/2 cups chopped tomatoes
1 (16 oz) can kidney beans, drained & rinsed
3 cups Uncle Ben's brown rice, cooked
1/2 cup low-fat Monterey Pepper Jack/Colby shreds

 

Directions:

  1. In a large skillet, over medium-high heat, saute onion, zucchini, green pepper, oregano, garlic salt, salt and pepper in oil for 5 minutes or until tender.
  2. Add tomatoes and beans; cover and heat thoroughly.
  3. Spoon vegetable mixture over hot rice; sprinkle with cheese.
