Strawberry Coconut Nests

 

Ingredients:

1 (8 oz) package light cream cheese
1/2 cup sugar
2 teaspoons milk
1 teaspoon vanilla
1 (13 oz) Angel food cake
1 cup sweetened coconut
2 pints fresh strawberries, sliced
1/4 cup sugar
1 (8 oz) carton lite whipped topping

 

Directions:

  1. Slice cake into 12 slices; set aside.
  2. Combine cream cheese, sugar, milk and vanilla; beat until smooth.
  3. Frost top and sides of cake slices with cream cheese mixture; sprinkle with coconut.
  4. In small bowl, combine sliced strawberries with 1/4 cup sugar; set aside.
  5. At serving time, press indention in center of cake slice. Spoon on starwberries and top with a dollop of whipped topping.
