Crockpot Corned Beef and Cabbage

 

Ingredients:

3 carrots, peeled and cut into 3" slices
4 medium-sized red new potatoes
1 (3 lb) Corned Beef Brisket
2 medium onions, quartered
1 medium cabbage, cut into eighths

 

Directions:

  1. In large crockpot, layer carrots, potatoes, corned beef and onion.
  2. Add 3 cups water; cover and cook on low for 10 to 12 hours or on high for 5 to 6 hours.
  3. Add cabbage wedges half way through cooking time.

Makes 12 servings
