Ingredients
  • 1 lb pork tenderloin, cut into thin strips (1/4” x 3”)
  • 1/2 teaspoon salt & black pepper
  • 1 tablespoon olive oil
  • 1 cup thinly sliced onion
  • 1/2 cups chicken broth
  • 3 tablespoons chopped cilantro
  • 8 corn tortillas (fresh are best)
  • 1 jalapeno pepper, seeded, chopped
  • 1/2 cup chopped tomato
  • 3 tablespoons fresh lime juice
Instructions
  1. Heat large nonstick skillet over medium-high heat. Sprinkle pork with salt and pepper. Add oil to pan. Add pork; brown for 5 minutes. Remove pork from pan; place in a bowl.
  2. Add onion and jalapeno to pan; sauté 4-5 minutes or until tender. Add broth; reduce heat and simmer for 1 minute, scraping pan to loosen browned bits. Stir in tomato and simmer 2 minutes.
  3. Return pork and accumulated juices to pan. Stir in cilantro and lime juice; cook 1 minute or until pork is done.
  4. Heat tortillas; spoon 1/2 cup pork mixture into each tortilla; roll and serve.
