Ingredients
  • 1 cup chopped onion
  • 1 teaspoon minced garlic
  • 1 tablespoons olive oil
  • 1 (16 oz) can diced tomatoes with green pepper and onion
  • 1 (10 oz) can Rotel tomatoes
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 eggs
  • 1/2 cup 2% sharp cheddar cheese, shredded
  • 6 corn tortillas, warmed
Instructions
  1. Saute onion and garlic in olive oil.
  2. Add next 6 ingredients and cook over low heat for 5 minutes.
  3. Pour sauce into a 9×13 baking dish.
  4. Make 6 indentations in the sauce and gently break an egg into each.
  5. Bake at 350 degrees for 15 minutes or until eggs set. Sprinkle with cheese
  6. and cook an additional 1 minute. Place each egg on a corn tortilla, cover with sauce and serve immediately.
